Ingredients Serving: 2

  1. 1 cup whole wheat pasta
  2. 1 cup spinach cleaned washed & roughly
  3. ĵ cup sweet corn boiled
  4. ĵ cup black olives
  5. ½ cup tri-coloured bell peppers cut int
  6. ½ cup broccoli blanched
  7. Few basil leaves
  8. 3 ½ tbsp red tomato pasta sauce
  9. 1 tsp heaped harissa sauce
  10. 1tbsp Parmesan Cheese
  11. 2-3 garlic cloves finely chopped
  12. salt to taste
  13. olive oil – 1tbsp


  1. Boil the pasta in salted water till al dente, drain & reserve ¼ cup of the pasta water.
  2. Spread the pasta while it is hot on a big plate or tray & apply ½ tsp olive oil to ensure it doesn’t stick to each other
  3. In a pan on a high flame heat the remaining oil & sauté garlic & add the spinach & sauté for 30 seconds
  4. Add the rest of the vegetables & sauté for another 30 seconds
  5. Meanwhile mix the pasta sauce, harissa sauce & the reserved pasta water.
  6. Add the pasta to the pan & pour the sauce mixture, mix & season it well
  7. Sprinkle half the cheese on the pasta & gently mix.
  8. Once the sauce is nice & thick, remove.
  9. Sprinkle the rest of the cheese & broken basil leaves & serve hot
