ABOUT Khandvi RECIPE

A mouth-watering traditional Gujarati healthy breakfast snack. Delicious savoury pin wheels prepared with gram flour and buttermilk tempered with asafoetida and mustard seeds and garnished with grated fresh coconut and finely chopped coriander leaves.

Ingredients Serving: 4

  1. Bengal Gram flour (besan)-1 ĵ cups
  2. Sour Buttermilk- 03 Cups
  3. Ginger- One-inch piece
  4. Green chillies- 02 Nos.
  5. Refined oil- 03 tablespoons
  6. Salt- to taste
  7. Turmeric powder- ½ teaspoon
  8. Lemon juice- 01 tablespoon
  9. Asafoetida- A pinch
  10. Mustard seeds- 01 teaspoon
  11. Fresh Coconut grated- 02 teaspoons
  12. Fresh coriander leaves - 1/4 th Bunch

Instructions

  1. In a glass bowl ,sieve besan . Remove the seeds of green chillies and prepare ginger and green chillies paste.
  2. Oil the reverse side of a few Stainless steel thalis or marble table top with a little oil, to prevent the khandvi mixture from sticking & to ease in rolling.
  3. Mix the besan with ginger-green chilli paste, salt, turmeric powder, lemon juice and buttermilk, taking care that no lumps are formed.
  4. In a thick bottomed pan, cook this mixture, stirring continuously, till it becomes a smooth thick batter. It takes a few minutes to get this ready.
  5. Quickly spread portions of the mixture over the oiled inverted thalis or marble table top as thinly as possible while the batter is still very hot.
  6. When cool, cut into strips two inches wide and roll them tightly and taking care that you don't break them.
  7. Heat two tablespoons of oil and add a pinch of asafoetida and mustard seeds.
  8. When they crackle / splutter, pour over the pieces.
  9. Serve immediately garnished with grated fresh coconut and very finely chopped green coriander leaves.
  10. Goes best with coriander chutney , coriander mint chutney or garlic chutney.
