Sahi vegetarian Egg Curry

Ingredients to make Sahi vegetarian Egg Curry

  • For vegetarian egg:
  • 1+1/2 cup grated paneer
  • 1 tsp salt or as per taste
  • 1/4 tsp sugar
  • 1/2 tsp turmeric powder
  • For outer layer:
  • 2 big potatoes (boiled and mashed)
  • 1 cup soak and boiled red kidney bean
  • 1 tsp salt or to taste
  • 2 tbsp chopped coriander leaves
  • 1 tsp red chili powder
  • 1 tsp roasted cumin seeds
  • 1 tsp garam masala powder
  • 2 tsp cornflour
  • 1 onion ( chopped and lighty saute in oil)
  • 1 tbsp grated ginger
  • For gravy:
  • 2 onions (sliced)
  • 2 big tomatoes (sliced)
  • 1 tbsp ginger-garlic paste
  • 4 tbsp oil
  • 1 tbsp ghee
  • 1 whole dry red chilli
  • 1" stick cinnamon
  • 4 nos green cardamom
  • 4 nos cloves
  • 1 no star anise
  • 1 tsp cumin seeds
  • 6-7 nos cashew nuts
  • 4-5 nos almond
  • 1 tsp salt or as per taste
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/4 tsp turmeric powder
  • 2 tbsp kashmiri red chilli powder
  • 1 tsp garam masala powder
  • 1 tsp dried fenugreek leaves
  • 2 tbsp chopped coriander leaves
  • Other ingredients:
  • 1 tbsp cornflour
  • 1/4 tsp red chilli powder
  • 1/4 tsp salt
  • 1/4 cup water
  • 1 cup bread crumbs
  • Sufficient oil for frying

How to make Sahi vegetarian Egg Curry

  1. For vegetarians egg mash the paneer thoroughly,mix Salt and sugar properly,divide mashed paneer into 4:1 ratio ,add turmeric powder in smaller portion.
  2. Make small balls with yellow portion.
  3. Flatten white portion of paneer on the palm, place a yellow ball in the centre .
  4. Bring all the edges together , cover it and shape like an egg.
  5. Blend coarsely boiled red kidney beans.
  6. For outer layer: Combine properly all the ingredients of the outer layer,
  7. Flatten it on the palm ,place the vegetarian egg in the centre and cover with the outer layer mixture.
  8. Just like picture below.
  9. Repeat for all .
  10. Now ready corn slurry ( mix cornflour, salt, chilli powder and water )and breadcrumbs.
  11. Dip one ball in corn slurry ,roll it in the breadcrumbs,so that the breadcrumbs sticks on all sides , repeat the process once again for double coating, ready all in same way.
  12. Now deep fry all , keep it aside to cool .
  13. Heat oil in a pan ,add cinnamon, cardamom, cloves, fennel seeds,cumin seeds, star anise ;saute it for a while,add sliced onion and fry.
  14. After the onion become translucent,add cashew , almond and ginger- garlic paste,fry it till raw smell disappears.
  15. Add tomatoes,salt, turmeric, Kashmiri red chilli powder, cumin powder, coriander powder and saute it till the tomatoes turn mushy.
  16. Add half cup of water and boil for 8-9 minutes.
  17. Allow it to cool and blend it to a smooth paste.
  18. Heat ghee in a pan,add tomato - onion mixture , then add garam masala powder, crushed dried fenugreek leaves, allow it to come to one boil, turn off the flame.
  19. Lastly add chopped coriander leaves.
  20. Now cut the vegetarian egg into halves , transfer the gravy to a serving dish and add the half vegetarian eggs , garnish and serve hot.
