Cherry Chocolate and Almond Loaf

Ingredients Serving: 6

  1. 200 grams unsalted butter at room temperature
  2. 140 grams all purpose flour + 1 tablespoon
  3. 1 cup fresh cherries stoned and halved
  4. 200 grams caster sugar
  5. 3 medium eggs at room tempertaure
  6. 100 grams almonds ground into powder
  7. 1 & 1/2 teaspoon baking powder
  8. 1/2 teaspoon salt
  9. 2 tablespoon milk
  10. 1 teaspoon pure vanilla extract
  11. 150 grams dark chocolate at room temperature chopped

Instructions

  1. Preheat the oven to 170 degrees C. Line a 900 grams loaf tin with parchment paper.
  2. Toss the chopped cherries in 1 tablespoon flour, keep aside.
  3. Add the butter and sugar in a large bowl and whisk using a had blender till light and fluffy. Add egg one at a time, whisking well between each addition say about a minute. Add vanilla extract, milk and whisk.
  4. In another bowl add all purpose flour, baking powder, salt, ground almond and mix well.
  5. Now add the wet ingredients into dry ingredients, mix well using a rubber spatula till the ingredients are just incorporated.
  6. Now add half of the cake mixture into the prepared tin, scatter half of the cherries which we had tossed in flour and some half the chopped chocolate. Add the remaining cake mixture and top with cherries and chocolate again.
  7. Bake for an hour. Check for the doneness using a skewer. If it does not come out clean bake for some more time till done, always keep an eye. Mine got baked in exact 1 hour.
  8. Allow to cool in tin for 5 - 10 minutes. Remove from the tin and place on a wire rack till it is cools completely.
  9. Melt some dark chocolate and drizzle it over cooled cake. Cut into slices and enjoy.
