Quatlama is a fabulous festival bread usually made in festive season.its soft and crunchy texture is really amazing.this aromatic bread is superb with chautny, sauce, chicken/mutton or salad.

Ingredients Serving: 3

  1. All purpose flour 2 cup
  2. Salt 1 tsp
  3. Oil 1 tbs
  4. Sugar 1 tsp
  5. Liquid milk as needed
  6. Gram flour paste:
  7. Gram flour 1 cup
  8. Red food colour 1/2 tsp
  9. Salt 1/2 tsp
  10. Egg 1
  11. Water as needed
  12. Red chilli powder 2 tsp
  13. For topping
  14. Fennel seeds
  15. Nigella seeds ,
  16. Chopped green chilli, .
  17. Coriander seeds
  18. Sufficient oil for frying.

Instructions

  1. IN A BOWL TRANSFER 2 CUPS OF ALL PURPOSE FLOUR,1 TSP SUGAR.
  2. ADD 1 TSP SALT, 1/2 TBS OIL AND MIX WELL.
  3. ADD LIQUID MILK AS REQUIRE TO MAKE REGULAR DOUGH.
  4. TRY TO ADD MILK LITTLE BY LITTLE.
  5. ONCE DOUGH FORMS GREASE WITH OIL AND REST DOUGH FOR 20 MINUTES.
  6. IN ANOTHER BOWL TAKE 1 CUP GRAM FLOUR,1/2 TSP RED FOOD COLOUR,SALT 1/2 TSP.
  7. ADD RED CHILLI POWDER 2 TSP,EGG 1 AND MIX WELL.
  8. ADD A LITTLE WATER TO MAKE A THICKENED PASTE.
  9. GRAM FLOUR BATTER SHOULD NOT BE TOO RUNNY OR TOO STIFF.
  10. SPREAD THE DOUGH ON A FLAT SURFACE.
  11. DIVIDE IN TO 4/5 PORTION.
  12. MAKE IT ROUND SHAPED.
  13. SPRINKLE FLOUR ON A FLATTENED SURFACE SPREAD IT OUT.
  14. CIRCLEED ROTIS ARE READY.
  15. SPREAD SMOOTHLY GRAMFLOUR PASTE ON EACH OF ROTI.
  16. SPRINKLE SOME CHOPPED GREEN CHILLI, FENNEL SEEDS,ON TOP OF GRAM FLOUR PASTE.
  17. ADD NIGELLA SEEDS, CORIANDER SEEDS ON TOP.
  18. PRESS WITH A FLAT SPOON LIKE THIS.
  19. FASTIVAL BREAD QUATLAMA IS READY TO FRY.
  20. DEEP FRY IN SUFFICIENT OIL.
  21. FRY ON HIGH TEMPERATURE TO AVOID TOO MUCH OIL ABSORBENT.
  22. FLIP AND FRY BOTH SIDE.
  23. TAKE LESS TIME TO AVOID TOO MUCH OILY QUATLAMA.
  24. LAHORE BEAUTY QUATLAMA IS READY.
  25. SERVE WITH SALAD,CHAUTNYOR SAUCE.
