Ingredients Serving: 6

  1. 1/3 cup orange marmalade (I used homemade orange marmalade, find my recipe at http://www.betterbutter.in/recipe/8027/chinese-orange-marmalade)
  2. 2-3 tbsp grapes marmalade (optional) (I had a small quantity lying in my fridge so used it. I used homemade grape marmalade. Find my recipe at http://www.betterbutter.in/recipe/7923/black-grapes-jam)
  3. 12 tablespoons unsalted butter, softened, or combination of oil and butter
  4. 3/4 cup granulated sugar
  5. 2 teaspoons grated lime zest
  6. ½ teaspoon grated orange zest
  7. 3 large eggs, at room temperature
  8. 2 tablespoons fresh orange juice
  9. 1 1/2 cups all-purpose flour
  10. 1 1/2 teaspoons baking powder
  11. 3/4 teaspoon salt

Instructions

  1. Heat oven to 350 degrees. Grease a 9 - by - 5-inch loaf pan.
  2. In the bowl of an electric mixer, beat together softened butter, sugar, lime zest and orange zest until light and fluffy, about 5 minutes. Beat in eggs, one at a time, until incorporated.
  3. Beat in both the marmalades and the orange juice.
  4. In a separate bowl, whisk together flour, baking powder and salt. Fold dry ingredients into wet until just combined.
  5. Pour batter into prepared pan. Bake until surface of cake is golden brown and a toothpick inserted in the center emerges clean, 50 to 55 minutes.
  6. Remove from oven and transfer pan to a wire rack. Once cooled, cut into slices and enjoy it with a cup of hot tea or coffee.
