ABOUT Apple Spice Snack Cake RECIPE

One cup of thick, fresh, tomato juice goes into the batter along with crunchy seasonal apples to make a moist, aromatic and healthy Apple Spice Snack Cake. The cake has whole wheat flour, apples, walnuts and spices. It is an addictive and guilt free cake with the pleasing aroma of spices and crunch of walnuts in every bite.

Ingredients Serving: 6

  1. 1 ¾ cup whole wheat flour
  2. 1 ¼ cup unrefined cane sugar/brown sugar
  3. ½ teaspoon salt (if using rock salt) or else 1/4 teaspoon sea salt
  4. ¾ teaspoon baking soda
  5. ¾ teaspoon ground cinnamon
  6. ½ teaspoon ground cloves
  7. ½ teaspoon ground nutmeg
  8. 1 teaspoon vanilla extract
  9. 1/3 cup + 1 tablespoon tablespoon vegetable oil
  10. 1 cup fresh tomato juice
  11. 1 cup thinly chopped apples
  12. 1/4 cup chopped walnuts
  13. Cinnamon sugar drizzle - 1/4 cup icing sugar
  14. 1- 1 1/2 teaspoon apple juice or tomato juice
  15. 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 180 degrees C. Grease and line one 9 inches round cake pan.
  2. Wash and peel tomatoes. Chop them fine. Blend the tomatoes. Strain. Measure one cup. The juice should be thick.
  3. In a wide mouthed large bowl, take first seven ingredients. Whisk well. These are dry ingredients.
  4. Make a well in the center.
  5. Add vanilla extract, oil and tomato juice. Mix till the dry ingredients and wet ingredients get just incorporated. Do not overmix. It will make the cake hard.
  6. You will get a thick pinkish batter.
  7. Fold in chopped apples and walnuts.
  8. Pour the batter into the prepared pan. Level the top. Bake for 30-40 minutes or until the top turns golden brown and a toothpick inserted in the center comes out clean.
  9. Remove from the oven after 10 minutes. Cool on a rack.
  10. Mix together all the ingredients of cinnamon sugar glaze. The glaze should be thick and not runny.
  11. Pour the mixture into a piping bag. Make a small slit at the end. Squeeze and make lines all over on the cake.
  12. Slice and serve. It tastes best the next day.
