Ingredients Serving: 5

  1. 500 g chicken
  2. For Green paste:
  3. 2-3 green chillies
  4. 1 tbsp chopped coriander leaves
  5. 1/2 inch ginger
  6. 3-4 garlic cloves
  7. For Malvani Masala ::
  8. 1/2 cup grated coconut
  9. 1 onion sliced
  10. 2-3 garlic cloves
  11. 1 teaspoon cumin seeds
  12. 1/4 cup warm water
  13. 4-5 pepper corns
  14. 1 small cinnamon stick
  15. 1/2 teaspoon poppy seeds
  16. 1 star anise
  17. 2-3 cloves
  18. 1 black stone flower
  19. For Marination
  20. 1/4 teaspoon turmeric
  21. 1/2 teaspoon red chilli powder adjust
  22. 1/2 teaspoon salt
  23. For Curry
  24. 2 tbsp oil
  25. 1 small onion finely chopped
  26. 1 teaspoon garam masala
  27. 1 tsp crushed garlic
  28. 1 teaspoon grated ginger
  29. 1/2 teaspoon kashmiri chilli powder optional
  30. Salt to taste
  31. 1 cup water

Instructions

  1. Grind green chillies, coriander leaves ginger garlic mentioned under green paste section to form smooth green paste
  2. Marinate chicken with green paste, turmeric, salt, red chilli powder for 1 hour or more
  3. Dry roast all whole spices until aromatic and grind to fine powder
  4. Heat 2 tsp oil in a pan, add sliced onions and saute until golden brown, take it out and keep it aside
  5. Add grated coconut and saute until golden brown. Add cumin seeds and garlic. Saute for 2 minutes. Allow to cool
  6. Grind coconut, onions, cumin seeds and garlic with 1/2 cup water to form smooth Puree. Keep it aside
  7. Heat 2 tbsp oil in a pan. Add chicken and roast for 2 minutes. Take it out
  8. In same pan, add chopped onions, ginger garlic and saute until onions are tender
  9. Add ground puree, ground spice, salt, chilli powder and mix well
  10. Keep stirring for 4-5 minutes over medium heat
  11. Finally add slightly fried chicken with garam masala. Stir well
  12. Add 1 cup water. Check for salt, adjust
  13. Cover and cook until chicken is cooked stirring occasionally
  14. Serve warm with rice or chapatis
