ABOUT Veggie Gold Coins RECIPE

Veggie gold coins are shallow fried fritters made with the mixed veggies.. Its crispy exteriors with flavor loaded interiors are to die for !! This is a perfect accompaniment for tea / coffee and best snack for the rainy evenings !!

Ingredients Serving: 5

  1. 10 slices : Bread
  2. 3 large Potatoes , boiled , peeled and mashed
  3. 1 medium : Carrot , peeled , finely chopped and boiled
  4. 10 nos : Green beans , finely chopped and boiled
  5. 1/4 cup : Fresh / frozen peas crushed
  6. 4 nos : Green chillies minced
  7. Few sprigs : Coriander chopped
  8. 1 tsp : Chaat masala
  9. 1/2 tsp : Oregano
  10. Salt to taste
  11. 2 tbsp : Corn flour
  12. 3 tbsp : All purpose flour / Maida
  13. 2 tbsp : Sesame seeds
  14. Oil for shallow frying
  15. For brushing : 1 tbsp : Maida mixed with 1/4 cup water

Instructions

  1. Before heading into the cooking process ...remove the edges of the bread slices and cut them into circular discs using a cookie cutter / any round mould.
  2. Now in a mixing bowl add the mashed potatoes , chopped carrot , beans , peas , coriander , minced green chillies , salt , chaat masala , oregano , maida and corn starch.
  3. Without adding any water knead this into a dough with the moisture of the veggies.
  4. Now add a spoonful or two of the mixture on each bread disc and press firmly sealing the sides of the disc.
  5. Brush their tops i.e the potato mixture with maida water and sprinkle few sesame seeds over it. Now press it slightly so that the seeds stick to the potato mixture.
  6. Next prepare a pan with oil for shallow frying..once the oil is hot add the discs with potato and sesame seeds side first ...,as it turns slightly golden flip over and fry on the other side until golden.
  7. Later remove and drain them on a paper towel.
  8. Veggie gold coins are ready to hogg on !! Serve them hot with ketchup or chilli sauce of your choice.
