This shrimp garlicky tomatoes with basil couscous is a fabulous dish.it takes frw minutes to prepare.the garlicky taste of tomatoes, juicy , mouth watering couscous & combo flavour of basil, thyme must blow ur mind.

Ingredients Serving: 2

  1. Couscous 1 cup
  2. Purple cabbage 120 GM
  3. Tomatoes 400 gm
  4. Large garlic cloves 3
  5. Shrimp 15 pcs peeled and deveined
  6. Extra Virginie olive oil 2 tbsp
  7. Kosher salt as to taste
  8. Freshly ground black pepper 1/2 tsp
  9. Fresh thyme 1&1/2 tbs
  10. Chicken stock 1/2cup
  11. Lamon juice 3 tsp
  12. Basil 3 tbs

Instructions

  1. In a pan add olive oil & saute garlic until fragrant.
  2. Add chicken stock and bring it to a boil.
  3. Pour couscous into stock.remove from heat.
  4. Heat oven 425 degree F.tear of four 12 inch squares of foil and arrange on two baking sheet.
  5. Spread cabbage among the pieces of foil.
  6. Top with soaked couscous.then tomatoes. sauteed garlic, drizzle olive oil.
  7. Add shrimp.sprinkle with 1/2 tsp kosher salt.freshly ground black pepper powder.
  8. Add 1&1/2 tbsp fresh thyme &2 tbsp basil leaves
  9. Drizzle with 3 tsp lamon juice.
  10. Cover with a another piece of foil and fold each edge up & over three times.
  11. Roast or grill.for 15 minutes.
  12. Transfer each packet to a plate. using scissor or a knife cut a "X"in the centre.
  13. Delicious shrimp garlicky tomatoes with basil couscous is ready.
  14. And fold back triangles.serve hot.
