Tex Mex Chilli Sandwich

Ingredients to make Tex Mex Chilli Sandwich

  • 2 boneless chicken breasts
  • 8 brown bread slices
  • 1/2 cup tomato puree
  • 1 tablespoon brown sugar
  • salt to taste
  • 1 teaspoon Mexican seasoning
  • 1 teaspoon crushed black pepper
  • 1 teaspoon grated garlic
  • 1/2 teaspoon chopped green chilli
  • 2 teaspoon green chilli paste
  • 2 tablespoon tomato ketchup
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon paprika powder
  • 1 tablespoon oil
  • 1 tablespoon butter
  • 4 tablespoons mayonnaise
  • Few iceberg lettuce leaves
  • 4-6 toothpicks for garnishing
  • 4-6 cherry for garnishing

How to make Tex Mex Chilli Sandwich

  1. 1. Mix together tomato puree, brown sugar, salt, Mexican seasoning,crushed black peppercorns,grated garlic, green chilli paste,chopped green chillies,tomato ketchup, Worcestershire sauce and paprika powder in a bowl.
  2. 2. Add in chicken breasts, mix well and set aside to marinate for 15-20 minutes.
  3. 3. Heat oil and butter in a non-stick grill pan.Place marinated chicken breasts in it and grill till fully cooked and evenly done from both sides.
  4. 4. When done,remove from heat and cut into slices.
  5. 5. Spread 2 tablespoon mayyonaise on to 4 bread slices.
  6. 6. Now top with some iceberg lettuce leaves and some grilled chicken slices.
  7. 7. Drizzle rest of the mayonnaise on top, cover with remaining bread slices and halve.
  8. 8. Garnish with toothpicks and cherries.
  9. 9. Serve immediately with some iceberg lettuce and grilled chicken slices.

My Tip:

Garlic paste can be substituted for grated garlic.
