ABOUT Tex Mex Chilli Sandwich RECIPE

Delicious sandwiches with spicy grilled chicken, mayyonaise and salad mixture bursting with Mexican flavours.

Ingredients Serving: 4

  1. 2 boneless chicken breasts
  2. 8 brown bread slices
  3. 1/2 cup tomato puree
  4. 1 tablespoon brown sugar
  5. Salt to taste
  6. 1 teaspoon Mexican seasoning
  7. 1 teaspoon crushed black pepper
  8. 1 teaspoon grated garlic
  9. 1/2 teaspoon chopped green chilli
  10. 2 teaspoon green chilli paste
  11. 2 tablespoon tomato ketchup
  12. 1 teaspoon Worcestershire sauce
  13. 1 tablespoon paprika powder
  14. 1 tablespoon oil
  15. 1 tablespoon butter
  16. 4 tablespoons mayonnaise
  17. Few iceberg lettuce leaves
  18. 4-6 toothpicks for garnishing
  19. 4-6 cherry for garnishing

Instructions

  1. 1. Mix together tomato puree, brown sugar, salt, Mexican seasoning,crushed black peppercorns,grated garlic, green chilli paste,chopped green chillies,tomato ketchup, Worcestershire sauce and paprika powder in a bowl.
  2. 2. Add in chicken breasts, mix well and set aside to marinate for 15-20 minutes.
  3. 3. Heat oil and butter in a non-stick grill pan.Place marinated chicken breasts in it and grill till fully cooked and evenly done from both sides.
  4. 4. When done,remove from heat and cut into slices.
  5. 5. Spread 2 tablespoon mayyonaise on to 4 bread slices.
  6. 6. Now top with some iceberg lettuce leaves and some grilled chicken slices.
  7. 7. Drizzle rest of the mayonnaise on top, cover with remaining bread slices and halve.
  8. 8. Garnish with toothpicks and cherries.
  9. 9. Serve immediately with some iceberg lettuce and grilled chicken slices.
