ABOUT Wholesome and filling Three Bean Salad RECIPE

The first time I had a three bean salad was in a restaurant called Nandos. I loved the dressing and wanted to recreate the dish at home. I am not very fond of salads but this is one dish that i can eat as a starter as well as main course. The dressing is super quick to prepare and the salad is very refreshing. This salad is sure to be a winner at potlucks and dinner parties.

Ingredients Serving: 4

  1. 1 cup black/red rajma or kidney beans, soaked overnight
  2. 1 cup kabuli chana/ chickpeas, soaked overnight
  3. 1 cup white or regular rajma or kidney beans, soaked overnight
  4. 1 green bell pepper very finely diced, almost 0.5 cms in size
  5. 1 red bell pepper very finely diced, almost 0.5 cms in size
  6. 1 yellow bell pepper (this is optional. I added only red and green) very finely diced, almost 0.5 cms in size
  7. 1 onion very finely diced very finely diced, almost 0.5 cms in size
  8. juice of 3.5 lemons
  9. 2 tbsp apple cider vinegar.
  10. 1 tsp olive oil or any regular cooking oil
  11. 1 tbsp powdered sugar
  12. 2 tsp salt
  13. 1 tsp black pepper

Instructions

  1. Pressure cook the three beans separately by adding a little salt to the water in the pressure cooker. Please ensure that they are tender but not mushy or pulpy. Drain all the water and let the beans cool in colanders.
  2. In a deep vessel add all the chopped veggies now pour the lemon juice, ACV, oil, sugar, salt and pepper and mix well.
  3. Now add the cooled beans and mix well. Let this cool in a refrigerator. Serve cold. Enjoy
