Ingredients Serving: 5

  1. 4 meduim sized ripe bananas
  2. 1/2 to 3/4 brown sugar
  3. 1/4 cup oil
  4. 3/4 cup milk at room temperature
  5. 1 tablespoon vinegar
  6. 1 1/2 cup wheat flour less 2 tablespoons
  7. 2 Tablespoons corn flour
  8. 1 1/2 teaspoon baking powder
  9. 1/2 teaspoon baking soda or 1 egg
  10. 1 teaspoon cardamom powder

Instructions

  1. Prepeare butter-milk by mixing milk and vinegar and leave aside for 10 minutes.
  2. Mash bananas in a grinder or with the help of a fork.
  3. Mix brown sugar or powdered jagerry to mashed bananas and mix well. I used 1/2 cup brown sugar as we like less sweet in our tea cakes.
  4. Preheat oven at 180C
  5. Grease and coat 2, 6 inch cake tins
  6. Mix all wet ingredients into the banana mixture. Add butter-milk and oil and whisk together well.
  7. Sieve flours baking powder and soda and cardamom powder.
  8. Add flour to wet mixture. Mix everything by cut and fold method.
  9. Pour and bake for 30 minutes.
