Ingredients Serving: 3

  1. Corn - 1/2 cup boiled
  2. Spinach - 1 cup washed
  3. Capsicum - 1/4 chopped finely
  4. White sauce/mayonnaise- as per preference to make the mixture little moist and not too runny.. About 5-6 tbsp
  5. Butter/oil- 1 tsp
  6. Salt, pepper, oregano, chilli flakes to taste
  7. Ingredients to make homemade White sauce:
  8. Garlic - 3-4 cloves finely chopped
  9. 1 tbsp whole wheat aata/maida
  10. 1 1/2 cup milk
  11. 1 tbsp butter/olive oil
  12. 1 Amul/Britannia cheese cube grated

Instructions

  1. Method to prepare the white sauce: Heat oil/butter in a pan and add garlic. Saute till it changes color. Add the flour and stir continuously. Cook for about 2 minutes till the time the flour changes its color lightly.
  2. Add milk and keep on stirring on low flame to avoid making lumps. Add grated cheese and cook n low heat stirring occasionally till you get a custard sauce like consistency.
  3. Do not over reduce the sauce to make it thick as we want it little runny to mix it with other ingredients.
  4. Method to prepare the Sandwich filling: Heat oil in a pan, add capsicum and saute for a minute. Add chopped spinach and cook till water dries up and spinach is wilted.
  5. Add corns in the mixture and mix well.
  6. Now add white sauce and add seasoning to taste. Mixture should be of spreadable consistency.
  7. Take a slice of bread and apply the filling on the bread and cover with another slice.
  8. Grill the sandwich in the griller or on a grill pan till nicely crisp and brown. Serve it hot.
