ABOUT Creamy spinach with mushrooms RECIPE

This is another one of those simple quick meals, easy to make and absolutely delicious.

Ingredients Serving: 4

  1. Spinach: one medium bunch
  2. Mushrooms: one 8 oz container
  3. Onion: 1 small chopped fine
  4. Garlic: 2-3 cloves minced
  5. Butter: 1 tsp
  6. Olive/ coconut oil: 1 tsp
  7. Fresh parsley: 1 tbsp chopped
  8. Oregano: 1/2 tsp ( optional)
  9. Salt to taste
  10. Black pepper: 1/4 tsp
  11. Milk: 1/2 cup
  12. Corn flour: 1 tsp

Instructions

  1. Wash the spinach properly and steam it for 5-8 minutes. Drain and keep aside.
  2. Then wash the mushrooms and cut them into big slices. Keep this aside.
  3. Next dissolve the corn flour into the milk and store aside.
  4. Heat butter & oil in a sauté pan. Add in the garlic and sauté for few seconds.
  5. Add in the chopped onions and sauté until it turns transparent in colour.
  6. Put in the sliced mushrooms; sauté this mixture for another 3-4 minutes. Do not overcook the mushrooms.
  7. Next put in the steamed spinach. Add the salt, black pepper and give it a good stir.
  8. Pour the milk-corn flour mixture into the pan. Let this simmer and cook until the sauce thickens.
  9. Finally add in the herbs and give it a final good stir.
  10. Serve hot with rice, bread, or pasta as per your choice.
