ABOUT Methi Dhapate(Fenugreek flatbreads) RECIPE

Dhapate are a great respite when short of time and the mid afternoon cravings need something nutritious. These multigrain flat breads are my aunt's specialty.

Ingredients Serving: 4

  1. Fenugreek leaves 1 cup
  2. Sorghum flour 1 cup
  3. Wheat flour 1/2 cup
  4. Chickpea flour 1/4 cup
  5. Ground coriander 1.5 tsp
  6. Ground cumin 1 tsp
  7. Ginger Paste 1 Tsp
  8. garlic paste 1 tsp
  9. Turmeric 1 tsp
  10. Chilli powder 1 tsp
  11. Asafoetida a pinch
  12. Sesame seeds 1 tsp
  13. Carom seeds 1 tsp
  14. Oil to roast the dhapate (I prefer less oil)
  15. Salt for taste
  16. Water to make a soft dough less than a cup

Instructions

  1. Clean the fenugreek bunch. Chop the leaves and wash.
  2. Mix all the dry ingredients in a bowl.
  3. Add in the ginger-garlic paste, fenugreek leaves and mix.
  4. Using just enough water make a soft dough.
  5. Heat a pan. Keep a wet cloth on the kitchen platform. Grease your palm with oil.
  6. Take a small portion of the dough(just like a chapati dough). Place it on the cloth.
  7. Start patting the dough into small roundels.
  8. Transfer the patted dhapata on to the hot pan.
  9. If you are patting large dhapata, make small holes in the dhapata and add a few drops of oil through the holes and the sides to roast.
  10. Cover and let cook for a couple of minutes.
  11. Flip the side and cook the other side as well.
