  1. FOR THE DOUGH:
  2. Mix active dry yeast, warm water and 1 tsp sugar and keep covered for 10 minutes.
  3. Add all purpose flour, 2 tsp sugar, butter, milk and the activated yeast mixture.
  4. Keep kneading the dough. It will be sticky at the beginning but gradually will be smooth and elastic.
  5. Will take around 15 minutes.
  6. Now keep this dough covered for first rise.
  7. In the mean time lets make the filling.
  8. Heat 2 tbsp oil in a pan and shallow fry the paneer pieces.
  9. Now in the same pan add 1 tbsp butter.
  10. Add ginger garlic paste and cook for 2 minutes.
  11. Now add the tomato puree, turmeric powder, salt, red chili powder, sugar and garam masala powder.
  12. Cook until the raw smell of tomato totally gone and oil started separating from the gravy.
  13. Now add the cashew paste and let it shimmer.
  14. Add the paneer pieces and kasouri methi powder.
  15. Cook covered for 5 minutes.
  16. There should not be much gravy. It will be a dry preparation as we will stuff the bread with it.
  17. Lastly add some cream and mix. Our filling is ready.
  18. The dough will be fully proved after 1 hour .
  19. Punch down the dough and again knead for 5 minutes. If your dough is perfectly ready you will see this type of nets in your dough.
  20. Now roll it in a rectangle shape. Do it on a butter paper and keep dusting with flour.
  21. Mark the rectangle into two equal parts.
  22. One part will remain as it is.
  23. Cut long and thin stripes from the other part of the rectangle.
  24. Place the filling on the intact part of the rectangle.
  25. Spread grated cheese over the filling.
  26. Now start rolling it to make a log. It will be little bit tricky.
  27. Cover the filling with the intact part and proceed towards the striped part of the rectangle.
  28. Complete making the log.
  29. Then make a round shape and seal the ends.
  30. Brush with milk and butter.
  31. Sprinkle some white sesame seeds over it.
  32. Keep aside 10 minutes for 2nd proving.
  33. Preheat oven at 180 C for 10 minutes.
  34. Bake for 20-25 minutes. After baking is done grill with upper rod on for 5 minutes for the nice golden colour on top.
  35. Brush with butter and serve with tomato ketchup.
