Tomato has a rich source of nutrients and vitamins like A, C, K & B6. It is good for our eye, fights against cancer, urinary infections, kidney problems and diabetes. It also improves digestion, lowers cholesterol levels, detoxifies our body and reduces inflammation amongst other benefits. So it is good to have tomato in a very comforting and a satiating soup form.

Ingredients Serving: 3

  1. 3 large tomatoes. roughly chopped
  2. 1 onion, chopped
  3. 2-3 garlic, chopped
  4. 1/2 tsp. ginger, grated (opt)
  5. 1/2 cup coriander stem / leaves
  6. 1 tbsp. olive oil
  7. 1 bay leaf
  8. 1" cinnamon stick
  9. 1/2 tsp. pepper or to taste
  10. salt to taste
  11. 4 cups stock / water
  12. coriander leaves, to garnish


  1. Heat oil in a pan and temper with the bay leaf and cinnamon. Then add the onion, ginger and garlic and saute till light brown.
  2. Add the tomatoes, salt and pepper powder and continue to fry for a minute or two. Remove the bay leaf and the cinnamon stick. Add the stock and the coriander stem and blend into a puree.
  3. Add more or less water according to the consistency required. Heat through and serve, garnished with coriander leaves and a sprinkle of pepper powder.
