Smoky Grilled Peri Peri Pomfret

ABOUT Smoky Grilled Peri Peri Pomfret RECIPE

Pomfret steaks marinated in freshly prepared peri peri sauce , fried and then given a smoke effect with coal . Do I need to say some more ? Relish !

Ingredients Serving: 5

  1. Pomfret fish steaks 5
  2. Peri Peri sauce :
  3. Red Thai chillies 4
  4. Paprika powder 1 tablespoon
  5. Salt 1 teaspoon or as preferred
  6. Garlic cloves 5
  7. Red vinegar 1 tablespoon
  8. Onion 1 big roughly sliced
  9. Oregano 1 teaspoon
  10. Rosemary dried 1/2 teaspoon
  11. Olive oil 2 tablespoons
  12. Olive oil 5 tablespoons for frying
  13. Water required for grinding

Instructions

  1. Heat 1 tablespoon olive oil in a pan .
  2. Add onions , red chillies and garlic .
  3. Sauté for 5 mins or until ingredients are sautéed and turns crunchy .
  4. Add in the salt , paprika and other seasonings .
  5. Add in vinegar . Mix . Switch off .
  6. Add another tablespoon olive oil .
  7. Cool this completely and blend to a smooth paste by adding very little water if needed .
  8. Peri peri sauce is ready .
  9. Now marinate the fish in the prepared sauce for 30 minutes . Refrigeration preferred.
  10. Take a grilled pan . Heat olive oil .
  11. Drop in the marinated fish pieces along with the marinade on the hot oil .
  12. Slow grill the fish both sides until done giving out a rich color. See that the sauce is coated well while frying the fish .
  13. Finally place a small bowl of charcoal in the centre of the pan while fish is being fried ( almost done ) .
  14. Cover the pan with a lid . When charcoal gets heated up , add 1 tablespoon ghee on the charcoal to give a smoke effect .
  15. Cover the pan immediately and let sit for 5 minutes in low heat .
  16. Take out the coal bowl from the pan .
  17. Smoky Grilled Peri Peri Fish is ready .
  18. Serve hot .
