About Mango chilli geleé stuffed chocolate cake with candied tomato sprinkles Recipe

This is one kind of innovative recipe which i followed based on what my taste buds suggested. And this gives a mix of various flavours where the cake is bit spicy, sweet, tangy and chocolatey

Mango chilli geleé stuffed chocolate cake with candied tomato sprinkles

Ingredients to make Mango chilli geleé stuffed chocolate cake with candied tomato sprinkles

  • flour 125gm
  • Baking powder 4gm
  • baking soda 2gm
  • sugar 195gm
  • egg 1.5
  • oil 23gm
  • Vanilla essence 2.5gm
  • Cocoa powder 50gm
  • water 60
  • buttermilk 75
  • Mango chilli geleé :
  • mango jelly crystals 45g
  • mango jelly premix 5g (available inside the content box)
  • Fresh Red chilli 1
  • water 1/2cup
  • Candied tomato sprinkles :
  • tomato skin from 3 tomatoes
  • Powdered sugar 1tsp
  • Chocolate Ganache :
  • White/ dark chocolate 1cup
  • Fresh cream 2tbsp heaped
  • butter 1tsp

How to make Mango chilli geleé stuffed chocolate cake with candied tomato sprinkles

  1. For candied tomato sprinkles :
  2. Blanch slit tomatoes in boiling water for 4 minutes or until the skin starts to take off
  3. Take the tomato from boiling water and peel it's skin
  4. Wash the peel and pat dry in a dry towel
  5. Now rub powdered sugar on it and mix well
  6. Either you can sun dry it for 2days or microwave it for 8minutes
  7. Once it's still hot blend it in a mixer till coarse or powdery
  8. Set it aside in a box
  9. Chocolate ganache :
  10. Break the chocolate into pieces
  11. Add cream and butter in it( I personally added 1/2tsp instant coffee powder)
  12. Temper it in Microwave and 20seconds interval for two or three times maximum and mix well till its melt
  13. Do not melt it very hot or the chocolate may burn
  14. After mixing it without any lumps let it set thick enough for piping
  15. Same way I made white chocolate ganache too
  16. And fill it in a piping bag
  17. For mango chilli geleé :
  18. Follow the package instructions
  19. Or Empty half of contents of jelly crystals and premix mixture , add 1/2cup hot water for firm jelly
  20. Otherwise you can add 3/4cup
  21. Mince one fresh red chilli
  22. Mix it well till it dissolves and let it half set in fridge for 20minutes
  23. Now add the minced fresh red chilli
  24. For cupcake :
  25. Preheat oven to 180c
  26. Take two mixing bowls and separate wet and dry ingredients
  27. Dry ingredients : sieve flour,baking powder, baking soda,cocoa powder in a bowl
  28. Wet ingredients : whisk egg ,oil,vanilla essence,butter milk,water,sugar
  29. Whisk till the sugar dissolves
  30. Add the wet ingredients to dry and mix without any lumps
  31. Pour the batter till 1/4 level in cupcake cups or well greased bundt mould
  32. Bake in oven for 15minutes or skewer inserted inside comes clean
  33. Take it out and cool it in wire rack
  34. With a cup cake corer or any cylindrical pipe scoop out the inside from cup cake
  35. Pour the half set jelly in the cooled and cored cup cake
  36. Cover the cup cake with the cored remaining and press it flat and well
  37. Let it cool and set in the fridge
  38. Pipe with the ganache and sprinkle the candied tomato flakes
  39. If it's a bundt cake do the same
  40. pour the tempered ganache around
  41. And place the completely set jelly in the middle and let it set in fridge for at least 15minutes

My Tip:

You can even replace mango floavor with orange jelly also
