ABOUT Badam Caramel Rice Kheer RECIPE

Badam Caramel Rice Kheer is one my grand mom's signature recipe. This is one of those deserts that makes me nostalgic takes me back to my childhood memories.She learnt it from her mother and later passed on to my mom. This creamy nutty and has a very distinct flavor of caramel. Be it any function this has been a must desert in the menu.

Ingredients Serving: 4

  1. 1 litre full cream milk
  2. 10 blanched and pureed almonds
  3. 4 tsp washed and soaked Basmati rice
  4. 2 tbsp sugar for caramel
  5. 4-5 tbsp sugar for the kheer
  6. Few thinly sliced almonds for garnish
  7. A pinch of cardamom powder

Instructions

  1. First wash and soak Basmati rice for 5 minutes.
  2. In a thick bottomed vessel bring full cream milk to boil by continuously stirring it. Once boiled add the rice and pureed almonds and reduce the flame and let the rice cook in the milk. This will take around 20 mins.
  3. In a non a stick pan add sugar and let it caramelize. Once the sugar is dark amber color switch of the flame. Pour it in the milk slowly from a distance. Be careful it might splatter.
  4. Mix caramel thoroughly with the milk rice. By this time the rice will be cooked. Add remaining sugar and cardamom powder and again boil it for 10 mins and then switch off the gas.
  5. Let it cool for some time and then pour it in desired short glasses or bowls and garnish it with sliced almonds and enjoy.
