These cookies are faintly sweet , delicious and the addition of dry coconut powder enhances the flavour of the riceflour cookies. A perfect tea time snack with minimal ingredients.

Ingredients to make Crunchy Rice Flour & Coconut Cookies

  • Rice flour – 1 glass
  • Dry coconut powder – 1/2 glass
  • Vegetable ghee / Vanaspati (slightly warm) – 1/2 glass
  • sugar powder – 1/2 cup.

How to make Crunchy Rice Flour & Coconut Cookies

  1. Make coarse powder of coconut slices in a dry mixie jar.
  2. Dry roast the coconut over a low to medium flame until it turns slight brown in color.
  3. Take a big bowl. Add the rice flour , roasted coconut powder , sugar powder to it.
  4. By adding slightly warm vanaspati to it , make a dough by rubbing the above mixture with your fingers. The dough must be similar to basic biscuit dough.
  5. Take a small portion of the dough , flatten it with a rolling pin. Cut it into desired shapes by using a cookie cutter.
  6. Place them onto a baking tray. Bake these in convection mode for 15 minutes – 18 minutes at 160°C.
  7. Once baked, remove the tray from the oven. Allow the cookies to cool for 15 to 20 minutes.
  8. Aromatic and Flavorful rice Flour & coconut cookies are ready to be served.
  9. These can be stored in an airtight container for 15 to 20 days.
