A different vegetarian dish made at our home by my mom-in-law.

Ingredients Serving: 6

  1. Red Tomatoes big sized 6
  2. 1 cauliflower small sized, cut into small pieces
  3. Ginger-Garlic crushed 1 tbsp
  4. 2 onions small sized, chopped
  5. 1 potato, chopped
  6. Oil 2 tbsp
  7. Salt to taste
  8. Red chilli powder 2 tsp
  9. Coriander powder 3 tsp
  10. Turmeric powder 1 tsp
  11. Sugar 2 tsp
  12. Coriander leaves for garnishing {optional}

Instructions

  1. Take the fresh red tomatoes, after washing them, with the help of a peeler, from one end of the tomato make a hole and take out the inner part of the tomatoes to prepare a puree of it. Keep the tomatoes for stuffing aside.
  2. In a pan add oil to heat then add in onion, ginger and garlic. Next add the chopped potato, cauliflower and tomato puree in it.
  3. Add in all the spices and salt, continue cooking till it is soft and completely cooked. When it becomes soft, add sugar in it. The stuffing is ready.
  4. Fill the stuffing in the tomato and cook the tomato with oil in a pan. The tomatoes should be cooked.
  5. Garnish with coriander leaves. This dish is ready to be served with parathas and chapatis.
