In Gujarat Bajri wada are very popular. I have made them more healthy by adding other flours.

Ingredients Serving: 3

  1. Bajra flour 1/2 cup
  2. Amaranth flour 1/4 cup
  3. Rice flour 1/4 cup
  4. Jowar flour 3 tbsp
  5. Besan 2 tbsp.
  6. Sooji 1/4 cup
  7. Garlic cloves 10.( Crushed
  8. Ginger grated 1 tbsp
  9. Green chillies crushed 1 tbsp
  10. Ajwain 3/4 tsp
  11. Sesame seeds 3 tbsp
  12. Curd 1/2 cup
  13. Jaggery grated 3 tbsp
  14. Red chili powder 2 tsp( to taste)
  15. Turmeric 1/2 tsp
  16. Coriander powder 2 tsp
  17. Oil 3 tbsp + 2 tbsp
  18. Oil for deep frying

Instructions

  1. Take all the flours in a bowl.
  2. Add ginger, garlic and green chillies.
  3. Add salt, turmeric, red chili powder.
  4. Add coriander powder, Ajwain and sesame seeds.
  5. Mix jaggery with 1/4 cup curd.
  6. Add in flour mixture.
  7. Add 2 tbsp oil.
  8. Mix everything well. Check the consistency and add curd if you can adjust.
  9. Add water if needed. The dough should be like roti flour .
  10. Cover it for 10 minutes. The dough will be softer because of jaggery and curd.
  11. Keep oil in kadhai for frying.
  12. In seasoning pan heat 3 tbsp oil. Add little 1/4 tsp red chili powder and add in flour mixture.
  13. Mix immediately. Now take a small ball. Grease your fingers.
  14. Pat between fingers and make Wadaas.
  15. Drop directly in hot oil in a pan.
  16. After turning lower the heat to medium.
  17. Fry golden. You need to be quick as flour may get loose.
  18. Keep some the mixture of the flours used , if flour become loose and difficult to manage, you can add some.
  19. Adjust masala in that case.
  20. Enjoy your wada with cup of tea / Coffee.
