ABOUT Unni-Appam RECIPE

This again happens to be my grand mom's recipe, easy and crunchy fried rice cake popularly known as unni-appam in kerala. Though these are easily available in shops i still prefer to make my own unni appams.

Ingredients Serving: 10

  1. 200 gm raw rice
  2. 1 cup +2 tbsp jaggery grated
  3. 2 tbsp all purpose flour
  4. 1 tsp cardamom powder
  5. 1/4 cup water
  6. Few coconut bits
  7. Coconut oil as required for frying
  8. Unni-appam pan/appe pan

Instructions

  1. Wash and soak rice for 3 hours. By the time rice is being soaked prepare syrup of grated jaggery and water by continuously stirring it till it thickens. Cool and strain this syrup and keep it aside.
  2. After 3 hours drain the rice and grind with the prepared jaggery syrup into a very fine paste.
  3. To the paste add in all purpose flour and cardamom powder.
  4. Fry the coconut bits in very little coconut oil till light golden brown and add it too.
  5. Mix this well and keep it aside for 2 hours.
  6. After 2 hours heat oil in unni-appam pan/appe pan and spoon this mixture in each cavity.
  7. Cook till golden brown from both sides. Serve when it's still warm.

Jaya, my mouth is watering for its taste. Our South Indian neighbor used to send us these and I'm craaazzyy for them. Two questions, Can we deep fry ? Aso, how long to cook the jaggery syrup, approximate time ? Thnx.
