ABOUT Fried Rice Roti RECIPE

Ney pathiri or fried rice rotti / poricha pathiri is a very common breakfast or dinner dish in Northern Kerala especially in Malabar. It tastes great with chicken or other meat curries or any veg curry.

Ingredients Serving: 9

  1. 1. Parboiled rice ( puzhungalari ) -  1 cup
  2. 2. Raw rice ( pachari )   -  1/2 cup
  3. 3. water
  4. 4. Grated coconut  -  1/2 cup
  5. 5. Fennel seeds ( perumjeerakm )  -  2 tspn
  6. 6. Onion  -  1/2 chopped
  7. 7. salt        
  8. 8. Rice flour - for making dough

Instructions

  1.      *  Wash and soak parboiled rice and raw rice in water for 5 hours or overnight.
  2.      *  Drain out water completely.
  3.      *  Grind it by using a food processor or grinder along with minimal water, grated coconut, fennel seeds, onion and salt until it becomes grainy paste ( don't make a very fine paste ).
  4.   *  This mixture will be watery so that we need to add rice flour and make a smooth dough.
  5.   *  Knead well and make a soft dough.
  6.     *  Heat oil in a deep pan.
  7.      *  Make lemon size balls out of the dough and rub oil in your palm or any plastic sheets and flatten it into a thick disc by using your hands.
  8.   *  Transfer it into hot oil and deep fry it.
  9.       *  When you put it in oil, bubbles will come and after sometime it will puff up.
  10.   Flip it to other side and fry both sides until light golden. Like this make all ney pathiri and Serve hot with any curry.
