ABOUT Karupatti Aapam - Palm Jaggery Aapam RECIPE

Its my Mom's recipe which has the healthy quotient of Palm Jaggery and a delicious variant of aapam.

Ingredients Serving: 5

  1. Raw rice – 1 cup
  2. Boiled Rice – 1 Cup
  3. Urad Dal – ¼ Cup
  4. Fenugreek – ½ Teaspoon
  5. Salt as needed
  6. Palm Jaggery / Karupatti – 100 gms
  7. Tuti Frooti / Butter for Garnishing

Instructions

  1. Soak Raw Rice, Parboiled Rice, Urad Dal and Fenugreek for four hours. Wash well and grind it to a fine thick batter. Add Salt as needed and allow it to ferment for 6 hours.
  2. Heat a pan with a cup of water, add the Palm Jaggery and allow it to boil. Once all the Jaggery gets dissolved, remove it from fire, strain it. Cool and add it to the Aapam batter after fermentation and ready to pour.
  3. Heat Aapam pan, Pour a ladle of the batter, hold the sides of the pan and rotate so that it spreads. You can also pour it in the centre and spread it using the back of a ladle.
  4. Sprinkle Tuti Frooti, cover and cook for a minute. Serve Hot. Plain Aapams can be served with Butter or even Coconut Milk.
