ABOUT Ooresina Kooralu - Pickled Veggies RECIPE

Ooresina kooralu means Pickled veggies that is a popular side served with Akki roti, roti, poori and tastes the best with Curd rice. Crunchy vegetables like Carrot, Raw Mango, Tindora, green chillies, radish, Garlic etc are pickled in Mustard, fenugreek, cumin powders along with citrusy lemon juice.

Ingredients Serving: 10

  1. 4 cups : Thinly sliced Vegetables
  2. 12 nos : slit Green chillies
  3. 8 nos : Garlic cloves
  4. 4 tbsp : Mustard seeds
  5. 1 tbsp : Fenugreek seeds
  6. 1 tbsp : Cumin seeds
  7. 1 tsp : Turmeric
  8. 1/2 cup : Lemon / Lime juice
  9. Salt to taste
  10. 2 tbsp : Ground nut oil
  11. 3/4 cup : Oil

Instructions

  1. Thinly slice or julliene the vegetables like Carrots, beans, Radish Tindora, Raw mango etc.
  2. Spread them on a muslin cloth and dry them in sun for half a day until they are dry to touch.
  3. Dry roast the mustard seeds for couple of minutes until they start to pop and grind into powder once cooled to room temperature.
  4. Dry roast the fenugreek and cumin seeds until aromatic and grind into powder once cooled to room temperature.
  5. In a deep mixing bowl add the mustard seeds powder, fenugreek cumin powder, Salt, Turmeric and give it a stir.
  6. Next add the vegetables and mix until the veggies are coated with the masala powders.
  7. Now add the oil and lemon juice mix well and set aside covered for curing.
  8. This might takes 3 to 4 days depending on the weather but, do not forget to stir them every day.
  9. After which you will observe the veggies tend to soften a bit and oil/liquid starts to float on top ...this indicates that the pickle is ready ...
  10. Give this a good stir and scoop into sterilised container !!
  11. Serve this with roti / poori / curd rice !!
