Ingredients Serving: 3

  1. Quinoa – 2 cup (cooked)
  2. Black Beans – 1 cup (cooked)
  3. Olive Oil – 1 tbsp
  4. Garlic – 2 cloves (minced)
  5. Onion – 1 (finely chopped)
  6. Tomatoes – 2 (chopped without seeds)
  7. Green bell pepper – 1 (chopped)
  8. Corn Kernels – ¼ Cup (boiled or frozen)
  9. Fresh coriander leaves – 2 tbsp (chopped)
  10. Jalapeno – 1 (chopped)
  11. Black pepper powder – to taste
  12. Salt – to taste
  13. Lemon Juice – 1-1/2 tsp
  14. Spring onion – chopped for garnishing
  15. Avocado – sliced for garnishing

Instructions

  1. Heat oil in a pan and add chopped onions and saute it until translucent. Now add minced garlic and saute it for a minute.
  2. Now add green bell pepper, tomatoes, corn kernels, jalapeno, salt and pepper. Mix well and saute it for 2-3 minutes.
  3. Now add cooked quinoa, beans, lemon juice, chopped coriander leaves. Mix well and cook for 2-3 minutes more
  4. Transfer the Mexican quinoa into a serving bowl and garnish with the spring onions and sliced avocado. Serve immediately.
