ABOUT Kootu Flour Sopes with Quick Fries RECIPE

Kootu Flour Sopes with Quick Fries recipe is a fusion recipe which can be eaten during fast. You can skip these ingredients (red chilli powder, chaat masala etc) if you don’t eat during fast. You can replace red chilli powder with black pepper powder.

Ingredients Serving: 2

  1. Kootu Flour – 3/4 Cup
  2. Salt – to taste
  3. Potatoes – 2 (washed, peeled and cut into sticks)
  4. Salt – to taste
  5. Red Chilli Powder – for sprinkling
  6. Roasted Cumin Powder – for sprinkling
  7. Chaat Masala – for sprinkling
  8. Lettuce – 3 to 4 tbsp (shredded)
  9. Tomato – 1 (chopped without seeds)
  10. Cucumber – 3 to 4 tbsp (chopped)
  11. Capsicum – 3 to 4 tbsp (chopped)
  12. Mint and coriander chutney – as required
  13. Yogurt – as required
  14. Oil – 1-1/2 tsp + for deep frying

Instructions

  1. Take a large mouth bowl. Add kootu flour, salt and 1-1/2 tsp oil. Mix well.
  2. Add little water at a time and knead a soft dough.
  3. Divide the dough into medium guava sized balls.
  4. Take one ball and press it lightly. Take some flour and lightly roll it like a small circle. It should be 3/8th inch thick. Now pinch the edges to form a raised rim about 1/4-inch high.
  5. Heat oil in a kadhai. Lift carefully the sope with spatula and put into the hot oil and deep fry it until crisp and cooked for both sides. (You can also bake it) Drain onto a paper towel.
  6. Repeat the process for making more sopes shells.
  7. For making fries, take a bowl and add salt, potato sticks and mix well and spare it for 5 minutes.
  8. Use towel to soak the water from potato sticks.
  9. Heat oil in kadhai and deep fry the potato sticks until they turns golden and crisp. Remove from oil and drain onto paper towels
  10. Arrange sopes in a serving plate or tray. Put some fries on each sope and top with shredded lettuce, tomatoes, capsicum, cucumber, yogurt, mint and coriander chutney.
  11. Sprinkle red chilli powder, roasted cumin powder and chaat masala over them.
  12. Serve immediately with yogurt, mint and coriander chutney.
