There is only one difference between a long life and a good dinner, that in the dinner, the sweet comes last . Kamola sundori is one of the awesome desserts from my Grandma who is a 102 years old lovely lady in our family . Kamola Sundori is actually an orange pancake stuffed with coconut and jaggery filling . Those cakes , pastries and various other sweet are in vogue in almost household but I would say those who have at least tasted my Granny Komola Sundori ones will never say no to it.

Ingredients Serving: 6

  1. Semolina or sooji - 250 gm
  2. Maida - 400 gm
  3. Palm jaggery - 200 gm
  4. Khoya - 200 gm
  5. Cooking oil - 3 -4 tablespoons
  6. Orange juice - 1 cup
  7. Milk - 1 1/2 cup
  8. Piece of egg plant or bottle gourd for greasing the pan
  9. Pinch of salt
  10. Grated coconut - 1 cup

Instructions

  1. In a large bowl gradually mix in maida and semolina and pinch of salt and mix together then add the orange juice and cup of milk to make a batter and set aside.
  2. Boil the palm jaggery with a little bit of water and add grated coconut , stir continuously until the mixture attains a thick consistency, add khoya and cook till thick then remove from heat .
  3. Heat the frying pan and coat the surface of the pan with little oil . Apply oil with a piece of egg plant or bottle gourd .
  4. Pour the 5 tablespoon of batter into the pan and spread the mix on the pan till it takes a circular shape .
  5. Put 2 teaspoons of coconut jaggery filling on the spread .
  6. Roll the spread like bread roll after 15 - 20 second .
  7. Keep the roll on the pan and flip sides every 5 - 10 seconds till it turn brownish .
  8. Enjoy it hot or cold .
