Ridge Gourd with Jowar-wheat flour dumplings is one of those authentic Maharashtrian recipes which you will not find easily on the internet or maybe even in cookbooks or any Hotel Menu. This rustic recipe passed on from one generation to another and is very close to my heart and palate, of course. Whoever thought of this fantastic combination of Ridge gourd and Dumplings was a genius! Ridge Gourd with Jowar-Wheat flour dumplings is a light meal in itself. You can also serve it with Bhakri or Rice.

Ingredients Serving: 2

  1. 2-3 garlic cloves, finely minced
  2. 2-3 Ridge gourds, peeled(roughly) and cut into 1 inch pieces
  3. 2 teaspoon red chilli powder
  4. 1 teaspoon mustard seeds
  5. 1 teaspoon cumin seeds
  6. 2 tablespoon oil
  7. Salt to taste
  8. handful of chopped coriander seeds for garnish
  9. For the Jowar-Wheat flour dumplings
  10. 1 cup Jowar (Sorghum) flour
  11. 1 cup Wheat Flour
  12. 2 teaspoon green chilli paste
  13. 1 teaspoon Ajwain (Carom seeds)
  14. 1/4 teaspoon turmeric powder
  15. Salt to taste

Instructions

  1. For the Jowar-Wheat flour dumplings
  2. In a mixing bowl add all the ingredients . Mix well.
  3. Add water and mix to make a soft, pliable dough.
  4. Shape small lemon sized balls of the dough into cylindrical croquette shaped dumplings. Keep them aside Pinch off a small lemon sized ball of the dough and roll into a log or an elongated dumpling.
  5. Make similar dumplings from the rest of the dough. Keep them covered.
  6. Heat oil in a heavy bottom pan.
  7. Add the mustard seeds. Once they splutter add the cumin seeds,garlic, turmeric powder. Fry for a few seconds and add the Ridge gourd pieces.
  8. Add salt and Red chili powder, mix and sauté for a few seconds.
  9. Add about ½ cup water. Place dumplings one by one over the Ridge gourd. Do not stir or mix.
  10. Cover and cook on low flame till the dumplings are done. (Insert a knife or cake tester to check)
  11. Only after the dumplings are cooked, stir the curry to mix.
  12. Garnish with fresh coriander leaves.Serve hot.
