ABOUT Qubani Ka Meetha RECIPE

Qubani ka meetha is an Indian sweet made from dried apricots originating from Hyderabad. It is a common feature at Hyderabadi weddings. Preparation of the dish involves boiling apricots with syrup until they assume the consistency of a thick soup or compote. The dessert is topped with blanched almonds or apricot kernels, and is traditionally garnished with malai (extra thick cream, ideally from buffalo milk), but also with custard or ice cream. Today I have made Qubani ka meetha by adding orange zest. I gives a nice taste to this recipe.

Ingredients Serving: 2

  1. 2 cups dry Apricots
  2. 1 cup sugar
  3. 1 tsp rose water
  4. 1/2 tsp cardamom powder
  5. 3-4 saffron
  6. 1/2 cup Blanched Alomonds
  7. Some lemon zest

Instructions

  1. Sock the apricots in water overnight.    
  2. On next day, darin the water From apricots.            
  3. Save the water for use later.
  4. Now deseed the all apricots.
  5. Now remove the almonds from seeds by breaking it.
  6. Keep Alomonds in one bowl for serving.      
  7. Now take a pan.  
  8. Add socked apricots into it.    
  9. Add sugar into it.    
  10. Now add 1 cup water that we have saved.        
  11. Let the sugar dissolve.
  12. Cook it for 10 minutes.
  13. Stir it occasionally in one direction.    
  14. Make sure the flame should be low.    
  15. Now take 75% apricots in one bowl and let it little cool down.    
  16. Now take a mixture and crush the cooled apricots.    
  17. Crush it according to your choice.
  18. You can make fine paste or you can keep it half crushed.        
  19. Now add crushed apricots to the pan and mix it with remaining apricots.
  20. Now add some orange zest.    
  21. Don't add too much zest add little as per your taste.       
  22. Now add Saffron and cardamom powder.  
  23. Mix it well.  
  24. Give it nice stir and cook it for 2 minutes.    
  25. Now turn off the flame.
  26. Let mixture cool down little bit.  
  27. Take it in serving bowl.  
  28. Add little rose water on top.    
  29. Also add blanched Alomonds and almonds that we remove from seeds.    
  30. Serve it with rabri or ice Qubani ka Meetha is ready to be serve.
