ABOUT AMRITSARI METHI MALAI MURGH RECIPE

Amritsari methi malai murgh is a rich and creamy chicken dish with the flavours of kasoori methi and spices. It goes well with naans, tandoori and roomali rotis.

Ingredients Serving: 3

  1. Chicken .... 500 gms
  2. Kasoori methi ... 3 tbsps
  3. Tomatoes .... 3-4
  4. Onions ........ 1/2 cup
  5. Yogurt ...... 2 tbsps
  6. Ginger paste .. 1 tsp
  7. Garlic paste ..... 1 tsp
  8. Green chillies .. 2
  9. Red chilli powder .. 1/4 tsp
  10. Turmeric powder ... 1/4 tsp
  11. Coriander powder ... 1 tsp
  12. Cumin powder ,,,,,,, 1/2 tsp
  13. Garam masala ....... 1/2 tsp
  14. Coriander leaves ... handful
  15. Salt ........ to taste
  16. Desi ghee or butter or oil ... 5-6 tbsps
  17. Cream .................... 2 tbsps

Instructions

  1. Marinate the chicken pieces with ginger garlic paste, yogurt, salt and half quantity of the spice powders mentioned in the list. Save the rest for later use.
  2. Blanch the tomatoes. Peel the skin and grind them with the onion and green chillies.
  3. In a pan heat 2 tbsps of ghee or oil and add the remaining spice powders. Reduce the flame or else they will burn.
  4. Add a little water. Stir the spices.
  5. Now tip in the marinated chicken pieces. Stir fry them.
  6. Simmer to cook in their own juices stirring a couple of times.
  7. In a separate pan heat the remaining oil and add the blended paste. Add salt and kasoori methi.
  8. Saute until the oil separates.
  9. When the chicken pieces are almost done add them to the gravy pan. Add some coriander leaves.
  10. Stir to mix and add little water if you need a little gravy. Check the salt.
  11. Finally stir in the cream.
  12. Mix immediately. Give a boil or two and remove from the gas.
