ABOUT Saffron Sweet Rice RECIPE

*Saffron Sweet Rice* Saffron Sweet Rice or yellow sweet rice is a popular dessert which is made with the basmati rice, sugar, saffron, clarified butter and dry fruits. It is also known as Zarda pulao and meethe chawal in punjab and also in other many states of india. You can make this special dish on any famous occasion like Holi, Diwali, Rakshabandhan, Eid or whenever you like to eat this yummy dessert. So let begin to make this yummy sweet rice..and hope you all like it.

Ingredients Serving: 3

  1. 1 cup Basmati Rice
  2. 1.5 cup water
  3. 2 tblspn clarified butter
  4. 2 tblspn milk
  5. 1/2 cup Sugar
  6. 1 piece of cinnamon stick
  7. 1/4 teaspoon of saffron threads
  8. 4 whole cloves (optional)
  9. 1/2 tsp coarsely crushed green cardamom seeds
  10. Few cashews
  11. Pinch of salt
  12. 2 tblspn pistachios
  13. 1 tblspn almonds
  14. 1 tbsp raisins

Instructions

  1. Chop almonds, cashews, pistachios and roast them dry on medium heat with raisins. Wait until the raisins get puffed and the nuts slightly change color. Set aside.
  2. Soak the rice in water for 15 minutes then put the rice, water, cinnamom stick, and salt in a sauce pan over medium heat.
  3. When the rice comes to boil, reduce the heat to low and cover. Let the rice cook for about 15 minutes.
  4. While rice is cooking, in a separate pan combine milk, butter, sugar, saffron, cloves and cardamom and bring to boil on medium heat, stir until the sugar get dissolved.
  5. Remove from the heat and set aside.Add the nuts mixture and sugar syrup over the rice. Fold gently into the rice with a spoon or spatula gently to avoid mashing the rice.
  6. Put the cover back over the rice and turn the heat on to very low. Let the rice simmer for 3 to 4 minutes.
  7. Turn the heat off and leave it covered for another few minutes before serving. Now saffron sweet rice are ready to serve, garnish it with safforn and chopped nuts then serve hot.

Can we use pure ghee instead of butter.
