ABOUT Tomato Coconut Chutney RECIPE

A delicious condiment served on the sides especially during ceremonies or pujas conducted in our house.

Ingredients Serving: 4

  1. 2 large tomatoes chopped
  2. 1 small onion chopped
  3. 2-3 green chilies chopped finely
  4. 1 tsp mustard seeds
  5. 1 tsp cumin seeds
  6. Dash of hing (asafoedita)
  7. 1/2" ginger minced/grated
  8. 1/4 cup grated coconut
  9. 2-3 tbsp sugar
  10. 2 tsp cashew tukda
  11. 1 tbsp raisins
  12. Salt to taste
  13. 2 tbsp Oil

Instructions

  1. Combine coconut, sugar, raisins, cashews, chilies, and salt to taste.
  2. Heat oil in small saucepan. Add mustard seeds. Once they pop, add hing and cumin seeds. Sauté.
  3. Add onions and cook till translucent.
  4. Add tomatoes and sauté. Cook till tomatoes turn soft and mushy.
  5. Add little salt and switch off gas. Cool thoroughly.
  6. Once cooled, combine coconut mixture with tomatoes.
