ABOUT Basundi RECIPE

Basundi is traditional delicious thick sweetened milk

Ingredients Serving: 4

  1. 1 litre full fat milk
  2. 1/3 cup sugar - adjust
  3. 1/4 teaspoon rose water
  4. 1/2 teaspoon cardamom
  5. 4 tbsp chopped nuts
  6. 1 generous pinch saffron

Instructions

  1. Heat milk in deep bottom vessel
  2. Bring milk to boil stirring occasionally
  3. Take out 2 tbsp milk in a bowl. Add saffron and soak in milk
  4. Cook milk until reduced to half.Add saffron milk, sugar, cardamom and mix well. Cook for another 4 minutes
  5. Allow to cool to room temperature. Blend basundi for better creamy texture. Chill until ready to serve
  6. Just before serving, garnish with nuts. Serve cold
