Uzhundu kali is authentic south Indian sweet given to the young girls during puberty, its believed that it strengthens the pelvic and back bones . Its rich in protien , iron and tastes yummy

Ingredients Serving: 4

  1. 1 cup white lentils / urad dal
  2. 2 tbsp Rice
  3. 2 cups palm Jaggery powdered
  4. 3 cups water
  5. 1/4 cup sesame / gingely oil
  6. 1 tsp cardamom powder
  7. 10 cashews (fried)

Instructions

  1. Dry Roast white lentils till you feel nice aroma.
  2. Once cooled Grind the lentil's ,rice to a fine powder.
  3. In a pan add powdered jaggery ,cardamom powder with water to boil and strain it.
  4. In a nonstick / heavy bottomed. Pan pour the jaggery water and let it come to a rolling boil.
  5. Add the ground flour and stir continuously to avoid lumps ( keep it over medium flame).
  6. Once it thickens add the gingely oil and mix well ( if you want you can use ghee instead).
  7. Keep stirring until it leaves the sides of the pan and garnish with fried cashews.
  8. Serve it in bowls are shape it like laddu 's.
