ABOUT Mulled Wine RECIPE

I think in December, it just feels so right. I love this recipe. It’s yummy and so apt for Christmas that you just have to include it in your Christmas menu. It smells of good tidings, of love, peace and all that Christmas stands for.

Ingredients Serving: 8

  1. Orange - 2, peeled & then juiced
  2. Demerara sugar - 1/2 cup
  3. Water - 1 cup
  4. Vanilla bean - 1
  5. Cloves - 4
  6. Star anise - 3
  7. Cinnamon stick - 1
  8. Allspice - 2 tsp, ground
  9. Nutmeg - 2 tsp, grated
  10. Full-bodied red wine - 1 bottle
  11. Cognac - 1/2 cup
  12. Lemon - 1, peeled

Instructions

  1. Peel the orange skin.
  2. In a non-stick pot, on medium flame, mix the sugar and water.
  3. Add the zest and juice of the 2 oranges.
  4. Add the vanilla bean, cloves, star anise, cinnamon stick, allspice and nutmeg gratings. Bring to a boil.
  5. After about 25 minutes, add about half a cup of wine.
  6. Simmer for 20 minutes more to get a syrupy consistency, infused with all the flavours.
  7. Add the remaining wine and the cognac and gently bring to a simmer for about 2 minutes.
  8. Do not overheat as the alcohol content will dissipate.
  9. Ladle into glasses and serve warm.
  10. You can also add seasonal fruits to the warm mulled wine. Let the preparation sit for 15 minutes.
  11. Always serve warm, but do not reheat.
