Barbecued Spicy Chicken Legs with Honey Glaze

Ingredients Serving: 6

  1. 1 and ½ kg chicken legs
  2. 1 and ½ tbsp red chilli powder
  3. ¾ tbsp coriander powder
  4. 1 and ½ tsp cumin powder
  5. 1 and ½ tsp black pepper powder
  6. 1 tsp fenugreek seeds, roasted and powdered
  7. ½ tbsp Turmeric powder
  8. 1 tbsp Garlic paste
  9. Salt to taste
  10. 1 and ½ cups red wine
  11. 4 tbsp vegetable oil
  12. 4 tbsp Honey
  13. 4 tbsp butter, melted
  14. Lemon wedges to serve

Instructions

  1. Make slashes in the chicken legs and place in a bowl.
  2. Combine chilli powder, coriander powder, cumin powder, pepper powder, powdered fenugreek, turmeric, garlic paste, salt, red wine and oil to make a paste.
  3. Add spice paste to the chicken and rub well into the slashes. Cover and set aside to marinate for an hour.
  4. Preheat oven to 220˚C/425°F/Gas 7. Arrange marinated chicken on a baking tray lined with foil and roast in the oven for 4 to 6 minutes till half done.
  5. Mix honey with butter and brush some of it over the chicken; turn the pieces over, cover with foil and roast for another 4 to 5 minutes till tender.
  6. Remove from oven and brush chicken with remaining honey-butter mixture.
  7. Serve hot with lemon wedges and a salad.
