ABOUT Chicken Shami Kabab RECIPE

Ingredients Serving: 6

  1. soaked chickpea - 1 cup
  2. boneless chicken - 400 gram
  3. turmeric powder - 1/4 teaspoon
  4. red chilli powder - 1 teaspoon
  5. chopped ginger - 1 tablespoon
  6. chopped garlic - 1 tbsp
  7. whole red chilli - 1-2
  8. whole cardamom - 1-2
  9. cinnamon stick - 1 inch
  10. cumin powder - 1 teaspoon
  11. garam masala powder - 1 teaspoon
  12. onion - 1 (finely chopped)
  13. chopped coriander leaves - about a handful
  14. chopped pudina leaves - about a handful
  15. water - as needed
  16. salt - as needed
  17. green chilli - 2 (chopped)
  18. egg - 2 (one for the mixer and another one for coating)
  19. oil - as needed for pan fry or swallow fry

Instructions

  1. take a large pot and add ginger, garlic, salt, turmeric powder, red chilli powder, whole red chilli, garam masala powder, cinnamon stick, whole cardamom and chicken.
  2. Add Water about half cup to partially cover the chicken. **Remember don't put too much water. After boiled the chicken and chickpea there shouldn't be left any water.**
  3. cover the pot and cook all these until chicken and chickpeas are soft and cooked.
  4. after cooked if there's any water left then evaporate the water completely.
  5. cool completely and remove the whole spices.
  6. add this to a food processor or blender and make a coarse paste. **should be look like dry and powdery**
  7. add green chillies, onion, pudina and coriander leaves. **check the salt this stage, if required then add now.**
  8. slightly beat one egg in a bowl.
  9. add the beaten egg little by little to the chicken mixture and form a dough. **use the egg as much needed for binding.**
  10. make balls and slightly flatten them to shape like kebabs.
  11. in a wide pan heat oil for shallow frying.
  12. slightly beat the leftover egg in a bowl.
  13. when the oil turns hot enough, deep one kebab each time in the egg and gently shake off the excess egg.
  14. Drop the kebab in the hot oil and fry on a medium heat until golden from both sides.
  15. Serve hot with sliced cucumber, onion and bit of lemon juice.
  16. Enjoy the unforgettable taste.
