Whenever I'm stressed or under the weather, cinnamon helps me get back to my funk. I also made this amazing Babka bread which I saw on pinterest and was intrigued by its twisting design.

Dough Ingredients:
794gm Flour
9gm Instant Yeast
425gm Warm Milk
2 tsp Salt
80gm Sugar
6 tbsp Vegetable Oil
1 Egg for the dough
Rolls Ingredients:
30gm softened butter
2 tsp Cinnamon
60gm Caster Sugar
Icing sugar for dusting/ or make a glaze
Babka bread Ingredients:
30gm softened butter
2 tsp Cinnamon
1/4 cup Nutella spread
60gm Caster Sugar
Icing sugar for dusting/or make a glaze
Instructions
Take a small bowl, dissolve the yeast in warm milk and keep it aside for 10 minutes.
Then take a large bowl and add in flour, salt, oil,egg and sugar. Form a well shape in between, pour the milk in the middle, while mixing it slowly together.
After they are evenly mixed together, start kneading till the dough becomes soft and flexible.
Place the dough in a well greased bowl and cover it for 2 hours or until it has doubled in volume.
After this time period, divide the dough into 2 parts: for rolls and bread (you could make all rolls too or just half the recipe)
To make the rolls:
Roll out the dough in a rectangle shape for about half an inch of thickness.
Spread the butter and sprinkle cinnamon and sugar uniformly.
Starting at one end, tightly roll the dough keeping the seam down. Pinch the seam lightly to make sure it does not break open in between.
With the help of a metal scraper or a serrated knife, cut about 1 or 1.5 inch sections.
Arrange them well in a greased pan and cover to rest for about another 30 minutes.
Preheat the oven to 180 degree celsius. Bake for 20 -25 minutes or until the top is beautifully browned.
Babka bread method:
Roll out the dough in rectangle shape for about half an inch of thickness.
Spread butter and Nutella evenly. Sprinkle cinnamon and sugar uniformly on top.
Starting at one end, tightly roll the dough keeping seam down. Pinch the seam lightly to make sure it does not break open in between.
Using a metal scraper or a serrated knife, cut in the middle to make two sections and leaving them joined at one end.
Roll each section outwards in a twist and and then twist them together in a braid formation.
Settle them well into a greased tray or you could also use a loaf pan. Cover and keep to rest for about another 30 minutes.
Preheat the oven to 180 degree celsius. Bake for 20-25 minutes or until the top is beautifully browned.
Serve warm with a hot cup of coffee or tea.
