This recipe is deep fried and is crispy from outside and soft and full of flavour from inside.

Ingredients Serving: 5

  1. All purpose flour-2 cup
  2. Carrom seeds -1tsp
  3. Salt -1/2 tsp
  4. Ghee1/4 cup
  5. Water-half cup
  6. For filling
  7. Boiled potatoes-2
  8. Black Mustard seeds-1 tsp
  9. Coriander seeds crushed-1tsp
  10. Onion chopped -5-6
  11. Gram flour-1tbsp
  12. Turmeric powder-1/2 tsp
  13. Salt -1/2 tsp
  14. Dry mango powder-1tsp
  15. Chat masala -1 tsp
  16. Green chilli chopped -1
  17. Corriander leaves -3-4 tsp
  18. Juice of half lemon
  19. Red chilli powder-1/2 tsp
  20. Oil for frying

Instructions

  1. Take all purpose flour/maida in bowl ,a dd,salt,carrom seeds,ghee in it mix well.knead dough not too soft nor too hard.
  2. Keep it at rest for 20 minutes
  3. For filling :take one tbsp oil in a pan ,add mustard seeds and coriander seeds to it .
  4. Next add mashed boiled potatoes ,mix well
  5. Add gram flour cook for 2minutes, add turmeric powder,salt,dry mango powder,chillies,and all dry ingredients
  6. Also add onion to it,now cook at medium flame for 8-10minutes.till all moisture goes
  7. Now add coriander leaves,lemon juice .make small balls of it.
  8. Now divide dough in equal parts roll each in round shape,keep one ball of stuffing on it and seal all sides and make a ball.
  9. Next press it and make small roti of it .make all and then in medium hot oil add kachoris in batches and keep gas flame low and cook for 15-20 minutes
  10. Flip them when they cook and come up .increase flame and cook till golden brown.
