ABOUT Zesty, Creamy Pasta Salad RECIPE

Zesty Pasta Salad with Creamy Ranch Dressing – An easy pasta salad loaded with fresh vegetables, tangy dill pickles and sunflower seeds in a delicious ranch dressing. This definite crowd pleaser is a perfect make-ahead side dish/salad for any party, get together or meal!

Ingredients Serving: 8

  1. 2 cups tricolor rotini pasta (using natural flavors) or your favorite pasta
  2. 1 cup chopped capsicum
  3. 1 cup chopped tomatoes (or cherry tomatoes)
  4. 1 cup broccoli florets
  5. 1 cup chopped cucumber
  6. 1 cup sliced red radish
  7. ½ cup chopped dill pickles
  8. ½ cup sliced red onions
  9. ¼ cup black raisins
  10. ¼ cup sunflower seeds
  11. 1 bottle Ranch or Creamy Italian dressing (or your favorite creamy dressing)
  12. Optional add ins:
  13. Chopped dill leaves
  14. Pumpkin seeds
  15. Chopped dates
  16. Sliced or grated carrots
  17. Shredded cabbage
  18. Walnuts (chopped) etc.

Instructions

  1. Cook pasta according to package instructions. Drain and keep aside to cool.
  2. Once you have drained the pasta, use the same hot water to blanch the broccoli florets until just tender. Drain and keep under running cold water to stop the blanching (this retains the dark green color of the vegetable), drain and cool.
  3. In a large mixing bowl, add all the salad ingredients: pasta, broccoli, cucumber, tomatoes, capsicum, onions, radish, dill pickles etc.
  4. Drizzle your favorite dressing (ranch in this case) over the whole mixture. Stir together to combine well.
  5. Chill in refrigerator until serving time. Pasta salad tends to absorb dressing over time, so drizzle some more dressing just before serving, mix and enjoy!
