ABOUT Stuffed Eggplant Curry RECIPE

My mom was born and brought up in Hyderabad, this is our favorite Hyderabadi dish.

Ingredients Serving: 4

  1. Tender eggplants 1/2 kg
  2. Dhania seeds 1 cup
  3. Chana dal 1 cup
  4. Red chilies dry 4-5
  5. Cumin 2 tsp
  6. Salt to taste
  7. Sesame seeds 2 tsp
  8. Peanuts 1/2 cup

Instructions

  1. Start dry roasting sesame seeds with peanuts.
  2. Add the dhania, Channa dal and add red chilies.
  3. Dry grind this to a coarse powder.
  4. Mix salt to taste.
  5. Slit the eggplants into 4 and stuff the powder.
  6. Take a pan heat 3-4 spoons oil and add mustard seeds.
  7. After it splutters add the eggplants and let it cook for 15 minutes.
  8. Turn gently and keep the flame in medium heat and serve with rice and ghee.
