This stunning cake kept me on my toes till it had its full rest, it came out absolutely messy but super moist and yumm.

Ingredients Serving: 4

  1. 225 gms Chocolate chopped
  2. 1 Stick Unsalted Butter
  3. 5 Eggs separated
  4. 1 Egg Yolk
  5. 1/2 Cup Granulated White Sugar
  6. 1 Tsp Cinnamon
  7. 2 Tbsp Brandy (Optional) or Coffee
  8. Decortaion Ingredients:
  9. 50g Chocolate shavings
  10. 20g White Chocolate shavings
  11. Icing Sugar for Dusting


  1. Preheat the oven to 160 degree Celsius. Grease and line a 9 inch spring form pan.
  2. Put the chopped chocolate into a heat proof bowl over a pan of simmering water along with butter. Leave until it is melted.
  3. Then remove from the heat, add in brand/ coffee and stir it well.
  4. Take a medium bowl, place in egg yolks along with half the sugar, then whisk until it is pale. Stir in the chocolate mixture.
  5. In a separate bowl, beat the egg whites until stiff. Gradually add in the remaining sugar with cinnamon.
  6. Using a spoon, fold one dollop into a chocolate mixture to loosen it.
  7. Next, carefully add in the remaining stiff whites until incorporated. Do not over mix this mixture.
  8. Transfer this mixture into the prepared pan. Bake for 30 - 40 minutes until it rises from center and is not wobbly.
  9. Once cooked, leave to cool in a pan. The cake is going to fall and become dense. However do not fret.
  10. Move the cake to a serving plate and decorate with sugar dusting and chocolate shavings on top.
  11. Serve warm for best taste.
