I have maked rabri with sonpapdi couple times earlier but this time to experiment a new dish,i baked this and made mini cheesecakes which everyone liked .

Ingredients Serving: 6

  1. 10 chocolate cream biscuits
  2. 2 tsp butter
  3. 300 ml milk
  4. 3 pieces Sonpapdi
  5. 1/4 Cup milkmaid
  6. 2 tsp cornflour
  7. few strands of saffron
  8. Pistachios, for garnish

Instructions

  1. Churn the biscuits in a mixer and make a powder.
  2. Melt the butter and add this to the biscuits powder.
  3. Put little of this mix in each silicone mould and press it nicely.
  4. Put it in refrigerator for 10 to 15 minutes.
  5. To make rabdi keep the milk to boil.
  6. Crush the Sonpapdi with hand and put it in the milk.
  7. Stir it for 4 to 5 minutes on medium flame till it gets little thick.
  8. Add condensed milk and mix well.
  9. Add little cold milk to the corn flour and add this to the rabri mix.
  10. Let it get thick for 1-2 minutes then switch off the flame.
  11. Let the rabri cool and then blend it in a mixer.
  12. Put this Rabri in the Silicon mould over the biscuit layer.
  13. Put these moulds in a baking tray and add a little water to the tray.
  14. Bake in a preheated oven at 180 degree Celsius for 25 to 30 minutes.
  15. Let it cool and then refrigerate for 4 to 5 hours.
  16. Demould when cool and garnish with pistachios and serve.
