Mixed Fruit Custard

Ingredients to make Mixed Fruit Custard

  • Milk 1 litre
  • sugar 1 and 1/2 cups
  • Vanilla custard powder 5 tbsp
  • cardamom powder 1/2 tsp
  • cashews 2 tbsp, chopped
  • almonds 2 tbsp, peeled and sliced
  • apple 2
  • banana 6, medium sized
  • pomegranate pearls 1/4 cup
  • Chikoo or Sapodilla 3
  • Fresh cherries, for garnishing (optional)

How to make Mixed Fruit Custard

  1. Add the custard powder to 1/2 cup milk and mix well with a whisk to make a smooth paste without any lumps.
  2. In a heavy bottom pan add the remaining milk and bring to a boil.
  3. Then reduce the flame and add sugar.
  4. Let it simmer for about 5 minutes.
  5. Now slowly add the dissolved custard in the boiling milk and with your working hand keep stirring continuously so that no lumps are formed.
  6. Cook for about 7-8 minutes on low flame.
  7. The custard will thicken slowly. Remember that it will thicken further when it cools down, so cook accordingly.
  8. Then add cardamom powder, cashews and almonds.
  9. Keep stirring continuously until it comes to a final boil.
  10. Remove from heat and set aside.
  11. Let it cool down completely and then chill in the refrigerator for an hour.
  12. Prepare the fruits 3-4 hours before serving so that the custard absorbs all the flavors and juices of the fruits.
  13. Peel apple, banana and chikoo and then chop all the fruits in small pieces.
  14. Add the chopped fruits and mix gently.
  15. Refrigerate until serving time.

  17. Using a ladle, pour the fruit custard in a bowl or dessert glass.
  18. Garnish with fresh cherry on top and serve chilled.

My Tip:

1. We prefer thick and creamy custard with fruits. If you prefer to make the custard thinner, add 3.5 tbsp of custard powder. 2. Store the custard in a Tupperware container and it will remain fresh for 2 days in the refrigerator. You may see slight color change on top the next day but not to worry as it is due to the bananas in it. Just give it a stir and you will see the same yellow custard. It is good to serve again. 3. Add sugar according to your taste. 4. Avoid adding seasonal and citrus fruits like melons, grapes, mangoes, lychee, pineapple, oranges etc. in the custard as it will result in curdling and it will no longer be able to consume. Instead, add them in bowl or dessert glasses just before serving and top with this fruit custard. Consume immediately.
