ABOUT Mixed Fruit Custard RECIPE

This rich, delicious and creamy fruit custard recipe is another gem from my mother who invariably makes it for dessert during summers and at all our family reunions. She grew up watching her father making this custard for them. It is one of those desserts I have grown up having along with gajar ka halwa. This is a simple recipe and definitely a Super Hit amongst the crowd!

Ingredients Serving: 4

  1. Milk 1 litre
  2. Sugar 1 and 1/2 cups
  3. Vanilla custard powder 5 tbsp
  4. Cardamom powder 1/2 tsp
  5. Cashews 2 tbsp, chopped
  6. Almonds 2 tbsp, peeled and sliced
  7. Apple 2
  8. Banana 6, medium sized
  9. Pomegranate pearls 1/4 cup
  10. Chikoo or Sapodilla 3
  11. Fresh cherries, for garnishing (optional)

Instructions

  1. Add the custard powder to 1/2 cup milk and mix well with a whisk to make a smooth paste without any lumps.
  2. In a heavy bottom pan add the remaining milk and bring to a boil.
  3. Then reduce the flame and add sugar.
  4. Let it simmer for about 5 minutes.
  5. Now slowly add the dissolved custard in the boiling milk and with your working hand keep stirring continuously so that no lumps are formed.
  6. Cook for about 7-8 minutes on low flame.
  7. The custard will thicken slowly. Remember that it will thicken further when it cools down, so cook accordingly.
  8. Then add cardamom powder, cashews and almonds.
  9. Keep stirring continuously until it comes to a final boil.
  10. Remove from heat and set aside.
  11. Let it cool down completely and then chill in the refrigerator for an hour.
  12. Prepare the fruits 3-4 hours before serving so that the custard absorbs all the flavors and juices of the fruits.
  13. Peel apple, banana and chikoo and then chop all the fruits in small pieces.
  14. Add the chopped fruits and mix gently.
  15. Refrigerate until serving time.
  16. To Serve:
  17. Using a ladle, pour the fruit custard in a bowl or dessert glass.
  18. Garnish with fresh cherry on top and serve chilled.
