Ingredients Serving: 3

  1. Full fat milk – 2 cups
  2. Lime juice – juice of 1 lime
  3. Cream – 1 cup(I used amul fresh cream)
  4. Sea salt – 1 tspn

Instructions

  1. 1. Add milk and cream into a deep bottom vessel and bring it to boil. 2. Next add lime juice and sea salt to milk cream mix and stir. On medium flame continue to boil the mix stirring occasionally to avoid burning at the bottom.
  2. 3. Do not over stir as it will break the ricotta. Once you see the whey separated completely from the fat switch off flame and remove from heat. Cool for a minute.
  3. 4. Pour the mix into a sieve lined with 2 to 3 cheese/muslin cloth. Allow the cheese to drain water for about an hour or more. The longer it sit, the thicker ricotta you would get.
  4. 5. That’s it! Making cheese at home can’t be more complicated than this.
  5. 6. Serve immediately if using over pizza, crostini or any bread of your choice. If you want to store transfer to air tight container and store it refrigerated for about 4-5 days.
