ABOUT Paneer & Corn Dosa RECIPE

You would have tried dosas and rotis of maize flour but have you ever tried making a dosa with fresh sweet corn kernels? With a small amount of besan for binding, and green chillies and coriander for flavour, juicy sweet corn kernels make scrumptious dosas that are of a perfect colour and texture. The best part is that the Corn Dosa can be made in no time at all, as it requires no soaking or fermentation and grinding time is also very less. It will be loved by all, especially kids! This is one of my favourite dosa recipes at home. I am happy to share this innovative recipe with everyone.

Ingredients Serving: 4

  1. 2-3 tsp oil
  2. 3-4 Garlic, finely chopped
  3. 1 1/2 Cup Sweet Corn Kernels
  4. 1 Cup Paneer, small pieces
  5. Salt and pepper to taste
  6. Pinch of turmeric
  7. Coriander, finely chopped
  8. 1 tsp Mixed Herbs
  9. 1/2 Cheese Cube Grated
  10. 1 tsp Lemon juice
  11. Pinch of sugar
  12. 5 tbsp besan (bengal gram flour)
  13. ½ tsp green chilli paste

Instructions

  1. Method For Corn Dosa : Blend the 1cup of sweet corn kernels in a mixer till smooth.
  2. Transfer the sweet corn mixture into a bowl, add all the remaining ingredients like green chilli paste, besan, salt and coriander.
  3. Add ¼ cup of water and mix well to make a batter of dropping consistency.
  4. Heat a non-stick tava (griddle) and grease it using a little oil.
  5. Pour a ladleful of the batter on the tava (griddle) and move the spoon in a circular motion to make a 150 mm. (6”) round dosa.
  6. Smear a little oil around the edges and cook on a medium flame till the dosa turns light brown in colour from both the sides.
  7. Fold over to make a semi-circle or a roll. Repeat with the remaining batter to make 3 more dosas.
  8. Method For Paneer Filling : In a non-stick pan add oil and saute garlic. Then add 1/2 cup of sweet corn kernels and mix.
  9. After 2-3 mins add paneer pieces, turmeric, salt and pepper to taste, coriander, grated cheese, mixed herbs, lemon juice and sugar. Mix to combine everything together.
  10. Adjust seasonings as per needed. Switch off the flame.
  11. The Paneer filling is now ready.
  12. Assembling : Serve the Corn Dosa with Paneer Filling inside.
